This is my solution to making sure I get a balanced meal when I’m too busy with the kids to sit down and eat with them. For lunch, the children will often eat sandwiches or leftovers, and I haven’t been organized enough to cook hot lunches all of the time. I seem to need something more substantial than a PBJ sandwich since I’m still nursing Adam ’round the clock.
All I did was cook up an easy meal of baked chicken, roast carrots and onions, sauteed mushrooms, and steamed green beans. I divided up the food into tupperware containers. After filling each container I sealed the top of the meal with plastic wrap, then put the lids on each container and popped them in the freezer. Before eating, I either microwave one meal on 3 minutes, take out and stir, then microwave for another 1 minute or so, OR defrost overnight in the refrigerator and microwave for about 120 seconds.
This has been a good solution for my lunches during those times where the kids have wiped out the leftovers but I’m still feeding the baby and haven’t eaten yet. I’m also thinking about making lunch the biggest meal of the day and then eating leftovers or sandwiches for dinner. I’m still trying to figure it out. How do you do lunch at your house?
